Spinach and Orzo Salad

Ingredients:

1/2 cup balsamic vinegar
1/2 cup Olive Oil
1/2 cup of Pine Nuts
1 onion finely chopped
1 pound finely crumbled Feta cheese
1 bag of finely chopped baby spinach
1/2 Tsp of Basil
1/2 Tsp of rosemary
1 tsp of ground black pepper
1/2 cup of chopped pine nuts
1 bag of orzo pasta

 

Directions:

Take a skillet and boil the water with lightly sprinkle salt and add the Orzo in it. Cook for 8 minutes until they become soft. In a separate bowl mix orzo, feta cheese, baby spinach, onion, Pine nuts, Black peppers, basil, rosemary and toss with olive oil and Balsamic Vinegar. Serve and enjoy.
